Barry Bananas Foster with Bacon

 

This is a weird time of year. There are still a few weeks left in the season, yet we know it's pretty much over. The Steelers fought through tonight's prime time match up against the Bungles and came out with a "W." Too little, too late? Maybe so. But I'm glad to see that they haven't thrown in the towel, so to speak...


Barry "Bananas" Foster, as Chris Berman called him, was a record-breaking running back for the Steelers in the early 1990's. His career was cut short by injuries, but he made his mark on the record books in his five NFL seasons. 


This was my first attempt at flambĂ©. It was a little stressful, but also pretty cool. 


Everything's better with bacon!


Barry Bananas Foster with Bacon
A Stiller Nation Snacks N'at Original

4 strips bacon
2 tbsp butter
3/4 cup dark brown sugar
1/2 cup dark rum
3 bananas, peeled and sliced

Vanilla bean ice cream

Cook bacon in large skillet over medium-high heat, about 5 minutes per side. Remove bacon and place on paper towel-lined plate. Add butter to skillet and melt with bacon grease. Stir in brown sugar until dissolved. Pour in rum, then carefully light with a grill lighter (be sure nothing is above the stove that could catch fire). Let alcohol burn off for about a minute, then blow out, if necessary. Chop bacon, then stir bananas and bacon into skillet. Cook for another 3-5 minutes until sauce thickens. Remove from heat and serve over vanilla ice cream.
